Enoki Mushroom Beef roll with Satay Sauce

This dish has only 3 main ingredients. It's simple & quick yet delish. We usually eat them together with steamed jasmine rice. 
Here are the recipe:

ENOKI MUSHROOM BEEF ROLL WITH SATAY SAUCE

Ingredients:
1 lbs thinly sliced fatty beef (sukiyaki cut)
2 bags enoki mushroom
2 tbsp satay sauce (Lee Kum Kee brand)
ground black pepper, salt and sugar
Cilantro leaves for garnishes
1/2 cup water

Method:
- Wash the enoki mushroom and devide into smaller equal portion
- Season lightly the beef with salt and pepper
- Roll the mushroom with the beef
- Pan fry the beef untilmedium rare
- Add the satay sauce and water
- Season to taste with salt pepper and sugar
- Remove from the heat when the beef is fully cooked (about 5 minutes)


Zha Jiang Noodles (noodles with Minced pork sauce)

My kids love noodles so much. They never get bored eating noodles.
I have variety noodles recipes and this one is one of them. It's quick and simple to prepare + yummy yumm yumm.
I usually use fresh noodle in Chinese market, beacuse it has chewy texture. 
The sauce is ground pork cooked with black bean paste sauce. It's thick sauce. Black Bean paste is made of black bean that are cooked and fermented with salt. It has rich nutty flavour. Butut is very salty. I usually ground it first before using. That way it will create smooth sauce. This noodle is served with vegetables (usually sliced cucumber, bean sprout, thinly sliced radishes).

ZHAJIANG NOODLES

Ingredients:
2 lbs Ground pork
4 tbsp soy sauce 
1 tsp salt
1 tsp ground black pepper
2 tbsp Chinese cooking wine.
4 cloves of Garlic
2 tbsp ginger, thinly sliced
1 tbsp dark soy sauce
4 tbsp Sweet bean Paste, mashed
400 ml chicken stock
corn starch (mix with water for thickening)

Garnishes:
some vegetables (thinly sliced radishes, bean sprout, thinly sliced cucumber)
green onion

Method:

- Mix together ground pork, soy sauce, salt and ground black pepper and set aside for about 15 minutes.
- sauteed garlic and ginger until fragrant. Add the pork, cook it until well done.
- Add the remaining ingredients (sweet bean paste, dark soy sauce, pepper, chicken stock).
- Heat it until it's boiled. Let it boil for about 5 minutes. Then add the corn starch mixtures, stir it properly. Turn off the heat once it's thickened.

DONE......now , prepare the noodles (I added olive oil, sesame oil, a little bit of fish sauce & black pepper when it was already cooked ) and any kind of veggies you want.
HOW TO EAT: Mix all (meat sauce, noodles & veggies) together until the meat sauce covers the noodles and the veggies.

Welcome to my cooking blog, Madam Chef's. 
My name is Merry Wu. I'm Indonesia born Chinese. I lived in in Tokyo, Japan for two and a half years (1997-2000) and then imigrated to Vancouver, Canada (till now). 
I'm a nurse in the nursing home. At home, I'm the personal chef of my family (husband and 3 children).
My cooking style is influenced by so many cultures: Chinese, Indonesian, Japan, Vietnamese and Canadian.
I love trying recipes and tasting different kind of cuisine. I love variety. 
I tried to introduce different kind of cuisine to my family too. 
I want to keep the recipes in this blog and share them with you. So you can enjoy the variety too. 
All the recipes has been tested by my family and friends.
